We use buckwheat flour from Nishimonai Soba in Ugo Town, Akita Prefecture. Since buckwheat flour loses its freshness within two days after milling, we grind only the necessary amount of carefully selected buckwheat seeds using a stone mill each time.

This means you can enjoy soba made from exceptionally fresh flour.

Our commitment to freshly milled, handmade soba is what we call "Kawabe's Rule."

The freshly ground flour creates soba that is rich in flavor and has a strong texture, ensuring your satisfaction.
