We make our soup using dried sardines from Kyushu, fresh chicken bones from Ooyama and Iwate, and a variety of vegetables. Our most popular dish is the soy sauce ramen, made with soy sauce from Shodoshima in Kagawa Prefecture. Another favorite is the salt dipping noodles, made with salt from Okinawa.

The clear broth has a strong fish flavor without being overpowering, and you can also sense the subtle hints of chicken and pork, creating a harmonious taste. The first sip might feel a bit light, but the gentle flavor allows you to enjoy it all the way to the last drop. We take care in our preparation, such as dry-roasting the niboshi (dried sardines) to eliminate any unpleasant odors, which brings out the rich umami of the dish.
