Our soup requires five days from preparation to completion. We carefully simmer pork bones and chicken carcasses along with twelve types of natural ingredients for three full days. By using a single pot for all the ingredients, we concentrate the richness and flavor. Additionally, since different ingredients require varying simmering times, we calculate the timing backwards from the finishing time, adjusting the heat to add each ingredient at just the right moment. After three days, the soup is left at room temperature overnight and then refrigerated for another day to complete the process. This soup is the essence of "Ramen Yamaya."
