We use only carefully selected domestic buckwheat for our soba.Using whole buckwheat with the husk on, we process it in our own soba workshop through the following steps: ① stone removal ② polishing ③ sorting ④ dehulling. We freshly mill only the amount needed for the day using a stone mill.

We adjust the coarseness of the grind to match the dish, offering both coarse and fine options.

The fundamental steps of soba making—water management, rolling, and cutting—are done by hand. For zaru soba, we serve both fine and thick noodles made with 100% buckwheat, while for kake soba, we use a 80/20 buckwheat-to-wheat ratio.
