The soup at Rokusanroku is crafted with delicious niboshi (dried sardines) from Japan and kombu (kelp) from Hokkaido for a rich dashi broth. We simmer pork bones for 14 hours and boil chicken carcasses in a separate pot for 5 hours, then combine the two and add vegetables, simmering for an additional 5 hours. This meticulous process takes three times the effort of a typical recipe.

Our noodles are specially developed to match the soup, using carefully selected flour to create thick noodles that stand up to the rich broth. The chashu (braised pork) is made from premium Shigen pork, simmered for hours in a secret sauce. To enhance the aroma and flavor, we sear the meat just before serving, maximizing its delicious taste.
