For our soba dipping sauce, we use "Saishikomi Shoyu," known for its rich flavor and depth, giving it an authentic Edomae style. Our udon broth features a first dashi made with katsuobushi from Yaizu, along with urume and niboshi, ensuring high-quality taste.
