Ichifuji Shoten! A unique Chinese-style noodle dish not commonly found in Sasebo. The soup is a light broth made from chicken carcasses and vegetables. The tare (sauce) is a carefully blended mix of four types of soy sauce, aged for a week, paired with custom-made medium-thick straight noodles from Goto Seimen! This bowl maximizes all the best flavors!
The niboshi (dried sardine) soba, made with plenty of locally sourced iriko from Nagasaki, is also gaining popularity with a high repeat rate, rivaling the Chinese-style noodles!
